The world of coffee is full of paradigms, yet extremely dynamic; thanks to different researchers and coffee growers who are dedicated to excellence, the paradigm of inferior cup of Coffea Canephora specie had been broken. Brazilian specialty Canephoras are being produced in different terroirs, and as such, the cup profile of each one is extremely diverse. Take, for example two canephoras produced at the Amazon forests of Rondonia and the mountains of Espirito Santo. With completely different climates, soils, and approaches to farming, these two terroirs are very distant. To be precise, the distance between them is around 3000 km. Indeed, Brazilian Specialty Canephora is an amazing example of the coffee movement.

    Peaberry

One of the most peculiar beans in the history of coffee. Did you know that Peaberry beans represent just around 5% of the specific coffee lot? But does it really taste better than other beans in the lot? According to our tests, our answer would be: Yes, some really do. We believe they reflect more brightness and complexity. And yes, those some are here in our offer.
But why do they taste better? We have two possible answers. First, the peaberry is the only bean inside the coffee cherry, and all the nutrition that normally feeds two beans is directed to it. Second, the peaberry is rounded, it receives the heat more equally during the roasting. If you maybe have some other theory about it, please share it with us.
